An ester formed by the esterification of Sorbitan with the fatty acid Oleic Acid, followed by polymerisation with ethylene oxide to form a polyoxyethylene compound (Polysorbate), that is a non-ionic, water soluble, surface active, oil in water emulsifying agent.

Description

The compound is also soluble in alcohols, ether, chloroform and cottonseed oil, but is insoluble in petroleum, liquid paraffin and mineral oils.

A clear, yellow brown oily liquid with a faint, characteristic odour and a warm, slightly bitter taste. Relative Density about 1.08. Viscosity at 25°C, about 400 cP. A 5% solution in water has a pH of 6-8.
